Visions and memories of Christmas breakfast past are still strong today among our families. We all continue to look forward to making new memories and sharing the excitement of Christmas morning with our family and friends, while we are opening our Christmas presents.
As one of the finales to the Christmas holiday arrives this week here are a couple of recipes that are quick and easy to prepare ahead of time. The majority of preparation can be done on Christmas Eve allowing you to be part of the Christmas morning excitement.
Before everyone wakes up, you can start preparing and baking these recipes which will fill the house with the sweet aromas of hot chocolate and buttery French toast.
Here’s a favorite recipe in our house for hot chocolate topped with marshmallows for the kids.
- 4 cups of milk
- 1.5 cups of water
- 1/3 cup of cocoa powder
- 1/3 cup of sugar
- Pinch of salt
- Mini marshmallows
On medium low heat, add the water, sugar, cocoa and salt. Stir constantly until everything is fully blended into a smooth chocolate sauce and slowly stir in the milk for a smooth chocolaty milk mixture. Carefully ladle the hot chocolate into your mugs and top with mini marshmallows or a spoonful of whipped cream.
You can add some chocolate or cinnamon sprinkles for garnish.
French Toast Casserole
- 6 eggs
- 2 cups milk
- 2 tbsp. sugar
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 loaf of French bread
Slice or cube the French bread and place the bread into a 9×13 buttered baking dish. In a separate bowl, add the eggs, milk, sugar, vanilla, nutmeg and cinnamon and mix the ingredients together. Next pour the egg mixture evenly over the French bread pieces in your baking dish.
The egg mixture should fill half of the baking dish. The bread will absorb the egg mixture while it rests overnight. Sprinkle the top with some cinnamon and nutmeg, cover your baking dish and set it in your refrigerator overnight.
Christmas morning, preheat your oven to 350. Remove your cover from the baking dish and bake for about 30 – 40 minutes.
