Adding corn bread to soup is a great way to make the soup a complete meal, as well as adding flavor and texture to a soup. But you don’t want to jazz up a soup with a dull ingredient. Thus, making corn bread bites is a simple way to jazz up any corn bread muffin mix.
So go one down to your local market, and grad your ingredients:
- 1 Package of corn muffin mix
- ½ Tablespoon of sugar
- ½ Teaspoon of paprika
- Pinch of cayenne pepper
- ½ Cup of shredded sharp cheddar cheese
- 2 Tablespoons of butter, chopped
- 1 Egg
- 1/8-1/4 cup of heavy cream
Pre-heat the oven to 400 degrees. Mix the first four ingredients together in a bowl. Then add the cheese and butter. Incorporate those ingredients with your fingers until you feel coarse sand with no big chunks.
Then add the egg with your fingers as well. Don’t over work these.
Add a little bit of the cream at a time until you have the consistency of scooped ice cream. At this time, scoop the dough into your favorite muffin bake ware. Cook for 15-17 minutes. Let cool for 5 minutes and serve immediately. A great pairing for these bites would be a black bean chili or roasted butternut squash bisque. Keep it Spicy!
