Garlic and cheese bread with mint is a nice change from bread or rolls on the dinner table but can also be used to make appetizers. Loaves can be frozen and used for several months. Three to four minutes in the microwave and it’s like bread that has just come out of the oven. This is really convenient when you have unexpected company at holiday time.
- ½ mozzarella cheese
- 3 cloves garlic
- ¼ cup dried mint
- 1 egg
- 1 yeast
- 1 cup warm water
- 2 cups flour
- ½ stick butter or margarine
- ½ tsp salt
Prepare yeast as directed on package. Mix flour, yeast, egg, salt and butter to knead dough for the bread. Add cubed pieces of mozzarella, mint and minced garlic and knead the ingredients through the dough.
Set dough aside in a warm place for 2 hours. For convenience, you may want to place the dough in the bread pan and then place the pan directly into the oven when ready.
Bake for 45 minutes to one hour at 350 degrees. Slice and serve.
Serving Suggestions: Garlic, cheese & mint bread is a great comfort food right out of the oven. The cheese is melted and there is nothing like freshly baked bread. It is also goes well with soups in the wintertime and gives added flavor to sandwiches.
- Cut the bread into small squares and top with your favorite cheese, salmon or salsa.
- Cut bread into long (biscotta type) slices and serve with fresh vegetables and dip
