This is a wonderful cheese log for guests and family to enjoy on Thanksgiving or anytime around the holidays. It’s perfect for a Christmas party, with its red and green color, and of course there are health benefits associated with the ingredients. I can remember sitting with a bag of pistachios as a kid, sharing them with a friend, and we did not move until they were gone. This tasty nut has been a popular treat for ages however, the popularity doesn’t stop as it taste. Pistachios have been found to be a very healthy nut as well. Pistachio nuts may provide protection against certain forms of cancer because of their Vitamin E content. Pistachios contain gamma-tocopherol. This form of Vitamin E may reduce the risk of lung cancer. Pistachios supply antioxidants and have a cholesterol lowering effect, providing a heart healthy benefit as well. Succulent cranberries, well known for their bacteria fighting compounds, and shown to be helpful in preventing urinary tract infections. Studies show they also contain substantial amounts of antioxidants and phytonutrients that may help guard against heart disease, cancer and other diseases.
- 4 oz. Organic Valley cream cheese softened
- 4 oz. unsalted organic butter
- 1 tbsp. Hannan honey
- 4 oz. grated white cheddar cheese
- 2 oz. grated Swiss cheese
- 2 tbsp. finely chopped fresh rosemary
- ½ cup Eden Foods organic dried cranberries
- ½ cup toasted pistachio nuts
In a medium size bowl, using a food processor or mixer, blend the softened butter and cream cheese; add in the grated Swiss and cheddar until well blended. Add the honey and half of the fresh rosemary. Transfer on to wax paper or parchment paper. Shape into a log, cover and chill in the refrigerator. Combine the cranberries, toasted pistachio nuts and rosemary. Roll chilled log into mixture. Serve with crostini.
