Ichiban’s atmosphere is simple, clean and friendly. Big windows surround diners and tables are laid with a linen, then covered with glass. The chefs are stationed behind a bar where, if you are dining alone or in a very small group, you can watch as your meal is prepared.
The menu offers a wide variety of meal choices while sticking closely to the authentic asian cuisine you would expect from a Japanese restaurant. Start with warm, salted edamame or seaweed salad. The homemade dressing for the seaweed salad is delicious; I’ve witnessed patrons sipping it from the bowl.
If you are interested in really good sushi, try the Sashimi, or a hand roll. Sashimi is a slice of the raw fish and is generally served with daikon radish. Season to taste with wasabi and soy sauce for a decadent raw meal. The hand rolls consist of a slice of fish, rolled in a full seaweed paper wrap with rice, zucchini, daikon radish, carrot shreds or all of the above.
A variety of sushi rolls are available as well, most created by the restaurant owner. A few traditional favorites like the California roll are also offered. Bear in mind that selections such as the California Roll are made with imitation crab – which is a mix of cooked fish – so it is not actually raw. The Crazy Monkey roll, a local favorite, is made with smoked salmon, cream cheese and avocado rolled up and served with mango sauce sprinkled with cashew pieces.
If you prefer a cooked meal, chicken and steak selections are also available, and equally delicious.
Saki and Japanese beer are offered, along with the standard “american” selections. A pitcher of warm Saki and a Mt. Fuji desert made of tempura fried bananas and chocolate, will compliment your meal and leave you relaxed and satisfied.
