It’s that time of year, when cold Laramie weather and a more leisurely pre-holiday attitude lead to pop-ins from friends, not to mention all the family members coming in for Thanksgiving and the beginning of ski season! No time to run to the bakery to pick up a treat for guests? This bread will be ready in a flash. Served as a sweet breakfast, tea time snack, or as dessert after a meal, this simple, homey recipe will become one of your go-to treats for years to come!
1 cup sugar
½ cup butter or margarine
2 tablespoons lemon juice
½ cup milk
1 ½ cups flour
½ teaspoon salt
1 teaspoon baking powder
½ cup frozen raspberries or blueberries (optional)
1/3 cup lemon juice
½ cup sugar
Mix sugar, butter, eggs, and milk. Add lemon juice, then stir in flour, salt, baking powder, and frozen fruit if using. Pour into a greased bread loaf pan and bake at 350°F for 35 to 45 minutes or until a toothpick inserted comes out clean.
Mix the remaining lemon juice and sugar and pour over the hot bread as soon as you take it out of the oven. Allow to cool 30 minutes, remove from pan, cut and serve.
