Sheraton Wild Horse Pass Resort and Spa is the place to send off 2010 and welcome in 2011 in style. There are several options to help you celebrate New Year’s Eve 2010 in either Ko’Sin restaurant or the resort’s Five-Star, Five-Diamond Kai restaurant, followed by live entertainment in the lobby bar provided by Blue Stone Project.
New Year’s Eve at Kai Restaurant
Executive Chef Michael O’Dowd is offering special five-, seven- and 12-course tasting menus.
- The five-course menu features lobster and foie gras brulee with gingersnap sugar crystals, winter greens with a compote of Bosc pears, Crow’s Dairy goat cheese, shaved truffles and cured gravlox, a fall fruit elixir, grilled tenderloin of buffalo from the Cheyenne River Tribe or Guaymas shrimp and diver sea scallops, all completed with Kai’s dressed-up version of “Milk and Cookies.” This menu is available at 5 p.m. only and is $125 per person. Wine pairing is $30-$40 additional per person, depending on wine choices.
- The seven-course menu features the above options for the amuse and first course and adds a second course complete with pate and mousse with pickled Gherkin relish gelee, Irish mustard foam, Iitoi onion marmalade, and black garlic croutons. A selection of Artisan cheeses and Kai truffles also compliment this menu. This menu is available at 5 p.m. or 8 p.m. and is $175 per person. Wine pairing is $40 or $80 additional per person, depending on wine selections.
- The elaborate 12-course tasting menu is the event for New Year’s Eve. The menu includes several of the items in the five- and seven-course menus, and is complete with white Alba truffles, pate, cured sausages, Dom Perignon, poached halibut cheeks with a ragout of Native beans and chard leaves, free range venison, sweetbreads, white asparagus dusted in pistachios and exotic mushrooms, and “rare” Iberico Bellota Lomo and Kobe beef tartare. The menu concludes with an extended selection of Artisan cheese and a grand finale of truffles. The 12-course dinner is available at either 5 p.m. or 8 p.m. The cost is $225 per person and wine pairing is $50 or $100 additional per person.
New Year’s Eve at Ko’Sin Restaurant
Ko’Sin will offer a prix-fixe menu on New Year’s Eve. The menu features a choice of entree: peppercorn crusted petit Filet Mignon and slow poached lobster tail, wet-aged New York strip steak, marinated Hudson Valley duck breast, wild salmon on creamy polenta, or game hen rubbed with mole. Fair Trade coffee and a selection of desserts complete each meal. The dinner is $80 for adults, $72 for seniors, and $40 for kids 12 and younger.
